Karkalla In Brine Makes It Shine

Craving for a unique and delightful ingredient on my menu lately and Karkalla has become my absolute favourite! This beautiful sea succulent offers a delightful crunch that's hard to resist.

In one of our recent salads we featured this wonderful bush ingredient. However due to the nature Karkalla in particular it's brief freshness, it was slowly losing its peak appearance after being picked a week ago. To salvage its flavours and firmness, I decided to pickle the Karkalla, infusing it with the essence of other delicious ingredients present in the pickle juice.

The result was simply fantastic! Tossed with roast pumpkin and a zesty lemon vinaigrette, the pickled Karkalla proved to be the star of the dish and was all it needed to make it shine.

Our bulk supply of bush foods comes from my dear friend Aaron Crikey in South Australia. During his travels, he paid us a visit and prepared a mouthwatering stir fry that incorporated a variety of delightful ingredients, including Karkalla and Geraldton wax.

This versatile ingredient can be used in various ways – as a garnish and to add texture and flavor to tacos, in salads, or stir-fries. Personally, I find its natural beauty to be a treat in itself and I enjoy it just as it is.

Beyond its culinary allure, Karkalla also offers soothing medicinal properties, beneficial for sore throats and skin ailments, similar to aloe vera. It doesn't stop there, due to its ability to thrive in sandy and salty environments, Karkalla is well-adapted to coastal regions and is also used for erosion control and land restoration purposes.
