Beetroot Loather Turned Lover

Are you a beetroot fan? I think it sits in the category of coriander, you either love or loathe. For so many years, I couldn't stand beetroot, and I blame my brother lol. When I was a kid, he told me that beetroot juice was Dracular's blood. And I couldn't stand the thought of it. 

As a result of growing beetroot for the last year and receiving beetroot from my friends at Lagom Farm, I am discovering a new appreciation for the beets.

Our last luncheon I was given two different varieties of beetroot, the regular beetroot that you find in the supermarket and the Polka beetroot. This beet is closer to a pink with very distinctive lines through it. I used the regular beetroot for a Beetroot, Beta and Lemon Myrtle dip. The feedback from our customers is that they loved it and even some said that they usually don't like beetroot but it was surprisingly tasty.

The Polka beetroot we used as a side dish to go with the mains, and the colours, OH MY GOODNESS it was so attractive. If you didn't like beetroot, you would still enjoy the look of the plate. It popped colour and freshness. Beetroots are high in Vitamin C, iron, folate and others.
